When it comes to plaster there are a couple of choices, regular plaster which comes in a few colors, white, blue, and gray. Plastered pools, even new will tend to color shift, this is called modeling, all plaster finishes do this so don't blame your service guy or plasterer if you see this. It is a natural occurrence. You can also choose to go with an exposed aggregate finish such as Diamond Brite(tm) which offers numerous colors. They also have colored quartz aggregate, Diamond Quartz(tm). Both of these design's offer something different to the pool owner with a texture and beautiful finish. You can check out the manufacturers website and see all the colors. I have seen these finishes and they are great. Aggregate finishes can cost around 30% more than traditional plaster but I believe it is worth the investment.
Which ever you choose you will love your new and improved pool finish. This would also be a great time to replace the tile and coping. But that's a whole other can of worms.
